Ingredients
- 1.2kg Chicken breasts, diced (approx. 8 medium)
- 16 slices Turkey bacon, cooked until crispy
- 8 Large low-carb tortillas
- 8 Mini low-carb tortillas
- 125ml Sugar-free sweet chili sauce
- 375g 0% Fat Greek yogurt, plain
- 150g Feta cheese, crumbled
- 120g Fresh baby spinach, packed
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 2 tsp Smoked paprika
- to taste Salt and Black pepper
Instructions
- Thicken the sugar-free sweet chili sauce in a pan; let cool completely.
- Season chicken with garlic, onion, smoked paprika, salt, and pepper. Sear in a non-stick pan until fully cooked.
- Lay out large tortillas. Spread a thin layer of sauce, followed by a generous dollop of Greek yogurt (approx. 45-50g per wrap).
- Layer a handful of spinach, followed by chicken, 2 bacon slices, and feta.
- Place the mini tortilla on top and fold the outer edges inward to seal.
- Toast seam-side down on a hot griddle for 5 minutes per side until the exterior is crisp.
- Serve immediately for maximum crunch.
