Protein-packed baked omelette featuring fluffy eggs and melted cheese, perfect for a balanced breakfast.

Ingredients

  • 3 large eggs
  • 1/4 cup egg whites
  • 30g (1 oz) shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Preheat the oven to 190°C / 375°F.
  2. Whisk the eggs, egg whites, salt, and pepper in a medium bowl until evenly combined.
  3. Stir in the diced bell peppers and onions.
  4. Pour the mixture into a greased small baking dish or ramekin.
  5. Scatter the shredded cheddar evenly over the top.
  6. Bake for 18-20 minutes, until the center is set and the top is lightly golden.
