Ingredients
- 3 large eggs
- 1/4 cup egg whites
- 30g (1 oz) shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Preheat the oven to 190°C / 375°F.
- Whisk the eggs, egg whites, salt, and pepper in a medium bowl until evenly combined.
- Stir in the diced bell peppers and onions.
- Pour the mixture into a greased small baking dish or ramekin.
- Scatter the shredded cheddar evenly over the top.
- Bake for 18-20 minutes, until the center is set and the top is lightly golden.
