Caramelized Onion Tarte Tatin by Ben Maxwell

savory vegetarian dish where caramelized onions are the star, served with chives and creme fresh.

Ingredients

  • 1.5 lbs yellow onions, thinly sliced
  • 1/4 cup unsalted butter
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet puff pastry, thawed
  • 2 tbsp fresh chives, chopped
  • 1/2 cup creme fraiche

Instructions

  1. Preheat oven to 400°F (200°C). Melt butter and olive oil in an oven-safe skillet over medium heat. Add sliced onions, sugar, salt, and pepper.
  2. Cook onions, stirring occasionally, for 30-40 minutes, until deeply caramelized and tender. They should be a rich golden brown and very soft.
  3. While onions cook, roll out puff pastry and cut to fit your skillet. Place puff pastry over the caramelized onions, tucking the edges down
  4. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up. Let it rest for 5 minutes before inverting.
  5. Carefully invert the skillet onto a serving plate. Garnish generously with fresh chives and serve with a dollop of creme fraiche.
