Caramelized Onion Tarte Tatin by Ben Maxwell

Ingredients
- 1.5 lbs yellow onions, thinly sliced
- 1/4 cup unsalted butter
- 2 tbsp olive oil
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 sheet puff pastry, thawed
- 2 tbsp fresh chives, chopped
- 1/2 cup creme fraiche
Instructions
- Preheat oven to 400°F (200°C). Melt butter and olive oil in an oven-safe skillet over medium heat. Add sliced onions, sugar, salt, and pepper.
- Cook onions, stirring occasionally, for 30-40 minutes, until deeply caramelized and tender. They should be a rich golden brown and very soft.
- While onions cook, roll out puff pastry and cut to fit your skillet. Place puff pastry over the caramelized onions, tucking the edges down
- Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up. Let it rest for 5 minutes before inverting.
- Carefully invert the skillet onto a serving plate. Garnish generously with fresh chives and serve with a dollop of creme fraiche.
