Healthy Chinese Zucchini Crêpe by Bella Cooking Made Easy

Ingredients
- 2 medium zucchini, grated
- 2 large eggs
- 1/2 cup all-purpose flour
- 2 tbsp green onions, finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp vegetable oil (for frying)
Instructions
- Grate the zucchini into a bowl, sprinkle with salt, and let sit for 5 minutes before squeezing out excess moisture.
- Combine the squeezed zucchini, eggs, flour, green onions, and pepper in a mixing bowl, stirring until a uniform batter forms.
- Heat the vegetable oil in a non-stick skillet over medium heat.
- Pour a thin layer of batter into the pan, spreading it evenly to form a crêpe
- Cook for 3-4 minutes per side until the edges are golden brown and the center is set.
