Ingredients

  • 2 medium zucchini, grated
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2 tbsp green onions, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil (for frying)

Instructions

  1. Grate the zucchini into a bowl, sprinkle with salt, and let sit for 5 minutes before squeezing out excess moisture.
  2. Combine the squeezed zucchini, eggs, flour, green onions, and pepper in a mixing bowl, stirring until a uniform batter forms.
  3. Heat the vegetable oil in a non-stick skillet over medium heat.
  4. Pour a thin layer of batter into the pan, spreading it evenly to form a crêpe
  5. Cook for 3-4 minutes per side until the edges are golden brown and the center is set.
