Tender chicken strips in a velvety Cajun-spiced cream sauce with sautéed peppers and melted cheese.

Ingredients
- 500g (1.1 lb) chicken breast, sliced into thin strips
- 300g (10 oz) penne or rigatoni pasta
- 1 tbsp cajun seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp italian seasoning
- 1 medium onion, diced
- 1 large bell pepper, diced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/2 cup mozzarella cheese, shredded
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped
Instructions
- Boil pasta in salted water according to package directions until al dente, then drain and set aside.
- Toss chicken strips with oil and all dry seasonings until evenly coated.
- Heat 1 tbsp oil in a large skillet over medium-high heat and cook chicken for 6-8 minutes until golden brown and cooked through; remove from pan.
- In the same skillet, melt butter with 1 tbsp oil, then sauté onion, bell pepper, garlic, and tomato paste for 4-5 minutes until softened and fragrant.
- Pour in heavy cream, stirring constantly over medium heat for 3-4 minutes until the sauce begins to thicken.
- Stir in Parmesan cheese until smooth, then return the cooked chicken and pasta to the pan, tossing to coat thoroughly.
- Top with mozzarella and fresh parsley, covering for 1 minute to melt the cheese before serving.
