Tender chicken strips in a velvety Cajun-spiced cream sauce with sautéed peppers and melted cheese.

Ingredients

  • 500g (1.1 lb) chicken breast, sliced into thin strips
  • 300g (10 oz) penne or rigatoni pasta
  • 1 tbsp cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp italian seasoning
  • 1 medium onion, diced
  • 1 large bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Boil pasta in salted water according to package directions until al dente, then drain and set aside.
  2. Toss chicken strips with oil and all dry seasonings until evenly coated.
  3. Heat 1 tbsp oil in a large skillet over medium-high heat and cook chicken for 6-8 minutes until golden brown and cooked through; remove from pan.
  4. In the same skillet, melt butter with 1 tbsp oil, then sauté onion, bell pepper, garlic, and tomato paste for 4-5 minutes until softened and fragrant.
  5. Pour in heavy cream, stirring constantly over medium heat for 3-4 minutes until the sauce begins to thicken.
  6. Stir in Parmesan cheese until smooth, then return the cooked chicken and pasta to the pan, tossing to coat thoroughly.
  7. Top with mozzarella and fresh parsley, covering for 1 minute to melt the cheese before serving.
