Ingredients

  • 2 eggs
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 4 oz mascarpone cheese
  • 1 cup heavy cream (for topping)
  • 2 tsp vanilla extract (for topping)
  • 1/4 cup maple syrup
  • 1/2 tsp salt (for topping)

Instructions

  1. Whisk together eggs, 1/2 cup heavy cream, 1/2 cup milk, 1 tbsp vanilla, and a pinch of salt in a shallow bowl until combined.
  2. In a separate chilled bowl, combine mascarpone, 1 cup heavy cream, 2 tsp vanilla, 1/4 cup maple syrup, and a pinch of salt.
  3. Whip the mascarpone mixture using a hand mixer or whisk for 2-3 minutes until thickened and holding soft peaks.
  4. Dip bread slices into the egg mixture, ensuring both sides are well coated.
  5. Heat a lightly buttered skillet over medium heat and cook bread slices for 3-4 minutes per side until golden brown and cooked through.
  6. Serve immediately topped with a generous dollop of the maple mascarpone cream.
