Savory ground beef simmered with diced vegetables, sweet raisins, and a vibrant tomato-based sauce.

Ingredients

  • 450g (1 lb) ground beef
  • 1 medium onion, diced
  • 2 tbsp tomato paste
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, diced
  • 400g (14 oz) crushed tomatoes
  • 1/2 cup water
  • 1/4 cup raisins
  • 1 medium bell pepper, diced
  • 1/2 cup frozen peas
  • 1 tbsp cooking oil
  • 1 tsp salt (adjust to taste)

Instructions

  1. Heat oil in a large pan over medium-high heat, add ground beef, and cook until water evaporates and the meat browns, about 8-10 minutes.
  2. Remove the beef from the pan and set aside, leaving the rendered fat in the pan.
  3. Add onions and tomato paste to the pan, sautéing for 3-4 minutes until onions are translucent and paste is fragrant.
  4. Return the beef to the pan and stir in the diced carrots and potatoes.
  5. Pour in the crushed tomatoes and water, then stir in the raisins.
  6. Reduce heat to low, cover, and simmer for 12-15 minutes until the potatoes and carrots are tender.
  7. Stir in the bell peppers and cook for 3 minutes, then add the peas and cook for 1 additional minute before serving.
