Ingredients

  • 500g ground pork
  • 1 large onion, finely diced
  • 2 medium carrots, finely diced
  • 100g shiitake mushrooms, finely diced
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp Shaoxing wine
  • 2 tbsp soy sauce
  • 3 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 tbsp sesame seeds
  • 2 green onion, sliced
  • 1 head iceberg or butter lettuce, leaves separated

Instructions

  1. Heat a wok over high heat and brown the ground pork until fully cooked through; remove from the wok and set aside.
  2. Add the onion, carrots, and shiitake mushrooms to the hot wok and stir-fry for 3-4 minutes until softened.
  3. Add the minced ginger and garlic to the vegetables and cook for 1 minute until fragrant.
  4. Return the cooked pork to the wok and toss to combine with the vegetables.
  5. Season the mixture with Shaoxing wine, soy sauce, hoisin sauce, sesame oil, salt, and white pepper, stirring well for 2 minutes to coat.
  6. Remove from heat and garnish with sesame seeds and sliced spring onions.
  7. Serve immediately by spooning the mixture into fresh lettuce cups.
