Beef Nilaga by Beabeabeatherese
Tender beef simmered in a clear, savory broth with sweet plantains, potatoes, and crisp garden vegetables.

Ingredients
- 1 lb beef, thinly sliced
- 5 cloves garlic, minced
- 1 medium onion, julienned
- 2 saba bananas or plantains, sliced into chunks
- 1 lb baby potatoes, scrubbed
- 1 cup baby corn
- 2 cup bok choy or cabbage, roughly chopped
- 4 cup beef stock
- 2 tbsp fish sauce
- 2 bay leaves
- 1 tsp whole black peppercorns
Instructions
- Sauté the garlic and julienned onion in a large pot over medium heat for 2-3 minutes until fragrant and softened.
- Add the sliced beef to the pot and sear for 3-4 minutes until browned on all sides.
- Pour in the beef stock, then add the bay leaves and whole peppercorns. Bring to a boil, then reduce heat to a gentle simmer for 10 minutes.
- Add the baby potatoes and plantain chunks to the pot. Simmer for 5-7 minutes until the potatoes are tender when pierced with a fork.
- Stir in the baby corn and leafy greens. Cook for another 2-3 minutes until the greens are wilted and bright.
- Season with fish sauce to taste and serve immediately while hot.
