Ingredients

  • 1 lb beef, thinly sliced
  • 5 cloves garlic, minced
  • 1 medium onion, julienned
  • 2 saba bananas or plantains, sliced into chunks
  • 1 lb baby potatoes, scrubbed
  • 1 cup baby corn
  • 2 cup bok choy or cabbage, roughly chopped
  • 4 cup beef stock
  • 2 tbsp fish sauce
  • 2 bay leaves
  • 1 tsp whole black peppercorns

Instructions

  1. Sauté the garlic and julienned onion in a large pot over medium heat for 2-3 minutes until fragrant and softened.
  2. Add the sliced beef to the pot and sear for 3-4 minutes until browned on all sides.
  3. Pour in the beef stock, then add the bay leaves and whole peppercorns. Bring to a boil, then reduce heat to a gentle simmer for 10 minutes.
  4. Add the baby potatoes and plantain chunks to the pot. Simmer for 5-7 minutes until the potatoes are tender when pierced with a fork.
  5. Stir in the baby corn and leafy greens. Cook for another 2-3 minutes until the greens are wilted and bright.
  6. Season with fish sauce to taste and serve immediately while hot.
