Chili Shrimp Lo Mein by Bacicancook

Tender sautéed shrimp tossed with springy lo mein noodles in a spicy, savory chili sauce.

Ingredients
- 250g (9 oz) shrimp, peeled and deveined
- 200g (7 oz) lo mein or egg noodles
- 2 tbsp chili oil or chili crisp
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp garlic, minced
- 1 tsp ginger, grated
- 1 tbsp neutral oil (for frying)
- 2 stalks green onions, sliced
Instructions
- Boil the noodles according to package instructions, usually 3-5 minutes, then drain and set aside.
- Heat the neutral oil in a large skillet or wok over medium-high heat.
- Add the shrimp to the pan and sear for 2-3 minutes until pink and cooked through; remove from the pan.
- In the same pan, add the garlic and ginger, sautéing for 30 seconds until fragrant.
- Whisk together the soy sauce, oyster sauce, and chili oil in a small bowl, then pour into the pan over medium heat until heated through, about 5 min.
- Add the cooked noodles and shrimp back into the pan, tossing everything together for 1-2 minutes until well coated and heated through.
- Garnish with sliced green onions and serve immediately until ready to serve.
