Chili Shrimp Lo Mein by Bacicancook

Tender sautéed shrimp tossed with springy lo mein noodles in a spicy, savory chili sauce.

Ingredients

  • 250g (9 oz) shrimp, peeled and deveined
  • 200g (7 oz) lo mein or egg noodles
  • 2 tbsp chili oil or chili crisp
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp neutral oil (for frying)
  • 2 stalks green onions, sliced

Instructions

  1. Boil the noodles according to package instructions, usually 3-5 minutes, then drain and set aside.
  2. Heat the neutral oil in a large skillet or wok over medium-high heat.
  3. Add the shrimp to the pan and sear for 2-3 minutes until pink and cooked through; remove from the pan.
  4. In the same pan, add the garlic and ginger, sautéing for 30 seconds until fragrant.
  5. Whisk together the soy sauce, oyster sauce, and chili oil in a small bowl, then pour into the pan over medium heat until heated through, about 5 min.
  6. Add the cooked noodles and shrimp back into the pan, tossing everything together for 1-2 minutes until well coated and heated through.
  7. Garnish with sliced green onions and serve immediately until ready to serve.
