Caribbean Saltfish Fritters (Accra) by Babasood

Crispy golden Caribbean fritters filled with savory flaked saltfish, aromatic onions, garlic, and fresh herbs.

Ingredients
- 340g (3/4 lb) saltfish (codfish), boiled and minced
- 3 cup all-purpose flour
- 1 tsp baking powder
- 1 tbsp sugar
- 1 tsp all-purpose seasoning
- 1/2 tsp black pepper
- 1/2 tsp turmeric or curry powder (optional)
- 1/2 tsp salt (adjust to taste)
- 1.25 cup water
- 1 medium onion, finely minced
- 3 cloves garlic, finely minced
- 2 stalks green onion, finely minced
- 1 tbsp fresh thyme, finely minced
- 2 pimento or bell peppers, finely minced
- 2 cup vegetable oil (for frying)
Instructions
- Boil the saltfish in water for 10 minutes to remove excess salt, then drain, debone, and mince into small flakes.
- Whisk the flour, baking powder, sugar, all-purpose seasoning, black pepper, turmeric/curry, and salt in a large bowl until well combined.
- Gradually add 1.25 cups of water to the flour mixture, whisking constantly until the batter is smooth, thick, and lump-free.
- Fold the prepared saltfish, minced onion, garlic, scallion, thyme, and peppers into the batter until evenly distributed.
- Heat the cooking oil in a deep pan or pot over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil, ensuring they do not touch, and fry for 2 minutes per side until golden brown and crispy.
- Remove the fritters with a slotted spoon and drain on a paper towel-lined plate before serving
