Meal-prep breakfast burritos with eggs, potatoes, cheese, and breakfast meat for easy grab-and-go mornings.

Ingredients

  • 6 large flour tortillas
  • 8 large eggs
  • 2 tbsp milk
  • 1 tbsp butter
  • 2 cups frozen diced potatoes
  • 1 tbsp olive oil
  • 1 cup cooked breakfast sausage or bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 avocado, sliced (optional)

Instructions

  1. Cook the potatoes in olive oil over medium-high heat for 10-12 minutes, stirring occasionally, until browned and crisp.
  2. Whisk the eggs with milk, salt, pepper, and garlic powder, then scramble in butter over medium-low heat for 3-4 minutes until just set.
  3. Warm the tortillas in a dry skillet or microwave for 20-30 seconds so they fold without cracking.
  4. Assemble each burrito with eggs, potatoes, breakfast meat, cheese, salsa, and avocado if using, keeping the filling in a tight line.
  5. Fold in the sides, roll the burritos tightly, and let them rest seam-side down for 1 minute to seal.
  6. For meal prep, wrap each burrito in foil and refrigerate for up to 4 days or freeze for up to 2 months.
  7. Reheat refrigerated burritos in the microwave for 1-2 minutes, or thaw frozen burritos before microwaving until hot throughout.
