Soft, vanilla-scented Rice Krispie treats with a mix of melted and marshmallow bits.

Ingredients
- 6 tbsp salted butter
- 1 pinch salt, if using unsalted butter
- 16 oz mini marshmallows, divided
- 1 tbsp pure vanilla extract
- 6 to 7 cups Rice Krispies cereal
- Butter or nonstick spray, for greasing a 9x13-inch pan
Instructions
- Grease a 9x13-inch pan with butter or nonstick spray.
- Melt the butter in a saucepan over medium-low heat for 2 to 3 minutes, then stir in the salt if needed and the vanilla.
- Add 15 ounces of the mini marshmallows and stir until fully melted, about 3 to 4 minutes.
- Turn off the heat, stir in the remaining 1 cup marshmallows, then fold in enough Rice Krispies to coat evenly.
- Pour the mixture into the prepared pan and gently press it into an even layer without packing it tightly.
- Let the treats rest covered at room temperature for 1 hour, then cut into squares and serve.
