Ingredients

  • 1.5 lb white fish fillets (cod or haddock)
  • 4 large russet potatoes
  • 1.5 cup all-purpose flour
  • 1 tbsp old bay seasoning
  • 1 cup sparkling water or beer
  • 1 tsp baking powder
  • 4 cup vegetable oil for frying
  • 2 lemons, halved for serving

Instructions

  1. Peel and cut potatoes into 1/2-inch thick sticks, soak in cold water for 15 minutes, then pat completely dry.
  2. Whisk together flour, baking powder, and Old Bay seasoning in a bowl; gradually stir in sparkling water or beer until a smooth batter forms.
  3. Heat oil in a deep pot to 350°F (175°C).
  4. Fry potato sticks in batches for 5-7 minutes until golden and tender, then drain on paper towels.
  5. Dip fish fillets into the batter, letting excess drip off, then carefully lower into the hot oil.
  6. Fry fish for 4-5 minutes per side until golden brown and flaky; serve immediately with chips and lemon wedges.
