Golden battered white fish fillets served alongside crispy fried potato sticks with fresh lemon halves.

Ingredients
- 1.5 lb white fish fillets (cod or haddock)
- 4 large russet potatoes
- 1.5 cup all-purpose flour
- 1 tbsp old bay seasoning
- 1 cup sparkling water or beer
- 1 tsp baking powder
- 4 cup vegetable oil for frying
- 2 lemons, halved for serving
Instructions
- Peel and cut potatoes into 1/2-inch thick sticks, soak in cold water for 15 minutes, then pat completely dry.
- Whisk together flour, baking powder, and Old Bay seasoning in a bowl; gradually stir in sparkling water or beer until a smooth batter forms.
- Heat oil in a deep pot to 350°F (175°C).
- Fry potato sticks in batches for 5-7 minutes until golden and tender, then drain on paper towels.
- Dip fish fillets into the batter, letting excess drip off, then carefully lower into the hot oil.
- Fry fish for 4-5 minutes per side until golden brown and flaky; serve immediately with chips and lemon wedges.
