Ingredients
- 4 large ripe bananas
- 170g (3/4 cup) unsalted butter
- 200g (1 cup) granulated sugar
- 150g (3/4 cup) light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 250g (2 cup) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 120ml (1/2 cup) sour cream
Instructions
- Preheat oven to 400°F (200°C) and roast unpeeled bananas on a baking sheet for 15-20 minutes until skins are black and bananas are soft.
- Melt butter in a saucepan over medium heat, swirling constantly until it foams and turns golden brown with a nutty aroma, then set aside to cool.
- Peel the roasted bananas, mash them in a bowl, and stir in the cooled brown butter.
- Whisk together the sugars, eggs, and vanilla in a large bowl, then stir in the banana-butter mixture over medium heat until well combined, about 8 min.
- Fold in the flour, baking soda, and salt until just combined, then stir in the sour cream.
- Pour batter into a greased 9-inch loaf pan and bake at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
