Ingredients
- 4 large ripe bananas, peeled
- 170g (3/4 cup) unsalted butter
- 200g (1 cup) granulated sugar
- 2 large eggs, room temperature
- 1 tbsp vanilla extract
- 250g (2 cup) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 120ml (1/2 cup) sour cream
Instructions
- Preheat oven to 200°C (400°F) and place peeled bananas on a baking sheet, roasting for 15-20 minutes until soft and caramelized.
- Brown the butter in a saucepan over medium heat, swirling constantly until golden and fragrant, then set aside to cool slightly.
- Mash the roasted bananas in a bowl and combine with the browned butter, sugar, eggs, and vanilla extract until smooth.
- Whisk together flour, baking soda, and salt in a separate bowl, then fold into the wet ingredients
- Stir in the sour cream until just combined, being careful not to overmix the batter.
- Pour the batter into a greased 9-inch cake pan and bake at 175°C (350°F) for 35-40 minutes or until a toothpick comes out clean.
