Healthy Sweet Potato and Ground Turkey Bake by Anti Inflammatory
Hearty ground turkey and tender sweet potatoes in a savory vegetable bake with melted cheese.

Ingredients
- 500g ground turkey (lean)
- 2 medium sweet potatoes, peeled and 1-inch diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup spinach or kale
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- 0.5 tsp cumin
- 0.5 tsp chili flakes (optional)
- 1 tsp salt (adjust to taste)
- 0.5 tsp black pepper (adjust to taste)
- 0.5 cup shredded mozzarella or cheddar (optional)
Instructions
- Preheat oven to 190°C (375°F) and lightly grease a baking dish.
- Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper, then roast for 15 minutes until partially cooked.
- Heat remaining 1 tbsp olive oil in a pan over medium heat, add onion, and cook for 3-4 minutes until softened.
- Add minced garlic to the onion and cook for 1 minute until fragrant.
- Add ground turkey to the pan and cook for 6-8 minutes until browned, then stir in paprika, oregano, cumin, chili flakes, salt, and pepper.
- Add bell pepper and zucchini to the turkey mixture, cooking for 2-3 minutes, then stir in the spinach until wilted.
- Combine the roasted sweet potatoes and the turkey-vegetable mixture in the prepared baking dish, mixing gently.
- Sprinkle with cheese if using, and bake uncovered for 15-20 minutes until the sweet potatoes are tender and the cheese is golden.
