Silky Smooth Mashed Potatoes by Andy Cooks

Silky Smooth Mashed Potatoes with potatoes butter and milk finished with fresh herbs and citrus.

Ingredients

  • 2 lb potatoes
  • 4 tbsp butter
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Score the middle of unpeeled potatoes.
  2. Boil potatoes in cold, seasoned water until fork-tender (about 20-25 minutes).
  3. Drain potatoes and let them steam dry for a few minutes.
  4. Gently pull off the skins from the steamed potatoes.
  5. Pass the potatoes through a mouli or ricer.
  6. Warm butter and milk together until hot.
  7. Mix the hot butter and milk into the riced potatoes until smooth.
  8. Season mashed potatoes with salt and pepper to taste.
