Silky Smooth Mashed Potatoes with potatoes butter and milk finished with fresh herbs and citrus.

Ingredients
- 2 lb potatoes
- 4 tbsp butter
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Score the middle of unpeeled potatoes.
- Boil potatoes in cold, seasoned water until fork-tender (about 20-25 minutes).
- Drain potatoes and let them steam dry for a few minutes.
- Gently pull off the skins from the steamed potatoes.
- Pass the potatoes through a mouli or ricer.
- Warm butter and milk together until hot.
- Mix the hot butter and milk into the riced potatoes until smooth.
- Season mashed potatoes with salt and pepper to taste.
