Tender garden peas simmered in a fragrant herb-infused reduction with fresh fennel fronds.

Ingredients

  • 800g (1.75 lb) fresh peas, shelled
  • 1 bunch fresh fennel fronds, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1/2 cup vegetable stock or water
  • 1 tsp salt (adjust to taste)
  • 1 tbsp fresh mixed aromatic herbs (parsley, mint, or basil), minced

Instructions

  1. Shell the fresh peas and discard the pods.
  2. Heat olive oil in a wide pan over medium heat.
  3. Add the peas and a pinch of salt, sautéing for 3-4 minutes until they begin to soften.
  4. Pour in the stock or water and add the finely chopped fennel fronds and mixed herbs.
  5. Simmer the mixture on low heat for 8-10 minutes, allowing the liquid to reduce into a light glaze that coats the peas.
  6. Check for tenderness; the peas should be vibrant green and tender, with the liquid reduced to a syrupy consistency.
