Spring Glazed Peas by Andreagiuseppucci
Tender garden peas simmered in a fragrant herb-infused reduction with fresh fennel fronds.

Ingredients
- 800g (1.75 lb) fresh peas, shelled
- 1 bunch fresh fennel fronds, finely chopped
- 2 tbsp extra virgin olive oil
- 1/2 cup vegetable stock or water
- 1 tsp salt (adjust to taste)
- 1 tbsp fresh mixed aromatic herbs (parsley, mint, or basil), minced
Instructions
- Shell the fresh peas and discard the pods.
- Heat olive oil in a wide pan over medium heat.
- Add the peas and a pinch of salt, sautéing for 3-4 minutes until they begin to soften.
- Pour in the stock or water and add the finely chopped fennel fronds and mixed herbs.
- Simmer the mixture on low heat for 8-10 minutes, allowing the liquid to reduce into a light glaze that coats the peas.
- Check for tenderness; the peas should be vibrant green and tender, with the liquid reduced to a syrupy consistency.
