Spaghetti tossed in a fragrant garlic and olive oil sauce finished with spicy chili flakes.

Ingredients

  • 1 lb spaghetti
  • 0.5 cup extra virgin olive oil
  • 8 cloves garlic, thinly sliced
  • 1 tsp chili flakes
  • 0.5 cup parmesan cheese, grated
  • 0.5 tsp black pepper
  • 1 tsp salt (for pasta water)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta cooks, add the olive oil, sliced garlic, and black pepper to a cold pan.
  3. Set the heat to medium-low and slowly infuse the oil with the garlic until the garlic is golden and fragrant, about 5-7 minutes.
  4. Stir in the chili flakes during the last minute of the garlic infusion.
  5. Drain the pasta, reserving a small splash of pasta water
  6. Add the drained pasta and Parmesan cheese to the garlic oil, tossing well to coat and emulsify, adding a splash of pasta water if needed to create a glossy sauce.
