Simple Garlic Aglio E Olio by Andngaaaa

Spaghetti tossed in a fragrant garlic and olive oil sauce finished with spicy chili flakes.

Ingredients
- 1 lb spaghetti
- 0.5 cup extra virgin olive oil
- 8 cloves garlic, thinly sliced
- 1 tsp chili flakes
- 0.5 cup parmesan cheese, grated
- 0.5 tsp black pepper
- 1 tsp salt (for pasta water)
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta cooks, add the olive oil, sliced garlic, and black pepper to a cold pan.
- Set the heat to medium-low and slowly infuse the oil with the garlic until the garlic is golden and fragrant, about 5-7 minutes.
- Stir in the chili flakes during the last minute of the garlic infusion.
- Drain the pasta, reserving a small splash of pasta water
- Add the drained pasta and Parmesan cheese to the garlic oil, tossing well to coat and emulsify, adding a splash of pasta water if needed to create a glossy sauce.
