Mom's Comforting Spiced Chicken Curry by Andngaaaa

Tender chicken pieces simmered in a rich, savory tomato base with aromatic garlic and fresh cilantro.

Ingredients
- 1.5 lb chicken, cut into pieces
- 0.5 cup yogurt
- 2 tbsp oil
- 0.25 cup cilantro, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 0.5 tsp sugar
- 0.5 tsp black pepper
- 1 tsp turmeric
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tbsp ginger, grated
- 2 onions, diced
- 3 tomatoes, chopped
- 2 tbsp hot oil (for tempering)
Instructions
- Combine chicken, yogurt, 1 tbsp oil, cilantro, garlic, salt, sugar, pepper, turmeric, curry powder, cumin, and ginger in a bowl. Marinate in the fridge for at least 30 minutes.
- Preheat oven to 400°F (200°C) and bake the marinated chicken for 15-20 minutes until lightly browned to reduce moisture.
- In a large pan, sauté diced onions with a splash of water to deglaze the pan and caramelize until golden brown, about 10 minutes.
- Add chopped tomatoes to the onions and cook until softened and broken down, about 8 minutes.
- Add the baked chicken to the pan, cover with liquid or stock if needed, and bring to a simmer for 10 minutes to mature the flavors.
- In a small separate pan, heat 2 tbsp oil until shimmering and pour over the curry (tempering) to release aromatic spice oils before serving.
