Herb-Crusted Roasted Leg of Lamb by Amorpoodie

Tender oven-roasted leg of lamb infused with fresh rosemary and garlic for a classic centerpiece.

Ingredients

  • 2 kg (4.5 lb) bone-in leg of lamb
  • 6 cloves garlic, slivered
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper, freshly cracked

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Use a sharp knife to make small incisions all over the leg of lamb and insert the garlic slivers.
  3. Rub the entire surface of the lamb with olive oil, then season generously with salt, pepper, and chopped rosemary.
  4. Place the lamb on a rack in a roasting pan and roast for 1 hour 20 minutes to 1 hour 40 minutes, or until an internal thermometer reaches 55°C (130°F) for medium-rare.
  5. Remove from the oven, cover loosely with foil, and let rest for at least 20 minutes before carving.
