Herb-Crusted Roasted Leg of Lamb by Amorpoodie

Tender oven-roasted leg of lamb infused with fresh rosemary and garlic for a classic centerpiece.

Ingredients
- 2 kg (4.5 lb) bone-in leg of lamb
- 6 cloves garlic, slivered
- 3 tbsp fresh rosemary, chopped
- 3 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp black pepper, freshly cracked
Instructions
- Preheat your oven to 200°C (400°F).
- Use a sharp knife to make small incisions all over the leg of lamb and insert the garlic slivers.
- Rub the entire surface of the lamb with olive oil, then season generously with salt, pepper, and chopped rosemary.
- Place the lamb on a rack in a roasting pan and roast for 1 hour 20 minutes to 1 hour 40 minutes, or until an internal thermometer reaches 55°C (130°F) for medium-rare.
- Remove from the oven, cover loosely with foil, and let rest for at least 20 minutes before carving.
