Seared tender steak bites tossed in a zesty, herb-infused garlic butter with a subtle smoky kick.

Ingredients
- 680g (1.5 lb) sirloin or ribeye steak, cut into 1-inch cubes
- 115g (1/2 cup) unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp fresh lemon zest
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Whisk together the melted butter, minced garlic, Dijon mustard, lemon juice, lemon zest, herbs, red pepper flakes, paprika, salt, and pepper in a small bowl until emulsified.
- Pat the steak cubes dry with paper towels and season lightly with additional salt and pepper.
- Heat a large cast-iron skillet over high heat until smoking hot.
- Sear the steak bites in a single layer for 2-3 minutes per side until a deep brown crust forms.
- Pour the prepared cowboy butter over the steak bites in the pan, tossing to coat for 1 minute until fragrant and bubbling.
- Remove from heat immediately and serve warm.
