Spicy Harissa Shiitake Mushrooms by Ammiskitchenig
Crisp, pan-seared shiitake mushrooms tossed in a vibrant harissa and garlic-infused olive oil reduction.

Ingredients
- 900g (2 lb) shiitake mushrooms, stems removed and cut into pieces
- 1 tbsp harissa paste
- 9 cloves garlic, finely chopped
- 80ml (1/3 cup) olive oil
- 1/2 tsp salt (adjust to taste)
Instructions
- Heat a large skillet over high heat until smoking slightly.
- Add mushrooms in a single layer (work in batches if necessary) and sear undisturbed for 6-8 minutes until slightly charred and browned.
- Reduce heat to medium, then add the olive oil, chopped garlic, and harissa paste to the pan.
- Cook, stirring constantly, for 5-6 minutes until the garlic is softened and fragrant and the harissa has emulsified into the oil.
- Season with salt to taste and serve immediately.
