Savory ramen noodles served in a rich, aromatic broth with tender toppings and fresh aromatics.

Ingredients
- 2 packs ramen noodles (dried or fresh)
- 1 l vegetable or chicken stock
- 2 tbsp soy sauce
- 1 tbsp miso paste
- 1 tsp sesame oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 2 soft-boiled eggs, halved
- 2 stalks green onion, sliced
- 1 tsp chili oil (optional)
Instructions
- Sauté the minced garlic and ginger in a large pot with sesame oil over medium heat for 2 minutes until fragrant.
- Pour in the stock, soy sauce, and miso paste, whisking until the miso is fully dissolved; bring to a gentle simmer for 10 minutes.
- Cook the ramen noodles in a separate pot of boiling water according to package instructions, usually 3-4 minutes, then drain.
- Divide the cooked noodles into bowls and ladle the hot broth over them.
- Top each bowl with a halved soft-boiled egg, sliced green onions, and a drizzle of chili oil before serving immediately.
