Miso Garlic Butter Cabbage with Butter Beans by Alfiecooks

Tender braised cabbage in a savory miso-garlic butter sauce, served with hearty, creamy butter beans.

Ingredients

  • 1/2 head green cabbage, cut into thick wedges
  • 2 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 3 cloves garlic, minced
  • 400g (14 oz) canned butter beans, drained and rinsed
  • 1/4 cup vegetable broth or water
  • 1 tsp lemon juice

Instructions

  1. Melt 1 tablespoon of butter in a large skillet over medium-high heat.
  2. Add cabbage wedges and sear for 3-4 minutes per side until charred and golden brown.
  3. Whisk together the miso paste, minced garlic, remaining butter, and broth in a small bowl.
  4. Pour the miso-butter mixture into the skillet around the cabbage wedges.
  5. Add the butter beans to the skillet, reduce heat to low, and cover.
  6. Simmer for 8-10 minutes, or until the cabbage is tender and the sauce has thickened slightly.
  7. Finish with a squeeze of lemon juice and serve immediately.
