Lion's Mane Mushroom Steak with Chimichurri by Alfiecooks

Pan-seared Lion's Mane mushroom steak basted in rosemary-garlic butter with a vibrant herbaceous chimichurri sauce.

Ingredients

  • 2 large lion's mane mushrooms
  • 3 tbsp unsalted butter (or vegan butter substitute)
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 1/2 cup fresh chimichurri (parsley, oregano, garlic, red wine vinegar, olive oil)
  • 1/2 tsp sea salt (adjust to taste)
  • 1 tbsp neutral oil (for searing)

Instructions

  1. Trim the base of the Lion's Mane mushrooms to ensure they sit flat, then slice into 1-inch thick steaks.
  2. Heat a heavy-bottomed skillet over medium-high heat with the neutral oil until shimmering.
  3. Place the mushroom steaks in the skillet and sear for 4-5 minutes per side until golden brown and compressed.
  4. Reduce heat to medium, add the butter, smashed garlic, and rosemary sprigs to the pan.
  5. Baste the mushrooms continuously with the foaming, aromatic butter for 3-4 minutes until deeply fragrant and tender.
  6. Remove from the pan and serve immediately topped with a generous spoonful of chimichurri.
