Lion's Mane Mushroom Steak with Chimichurri by Alfiecooks

Pan-seared Lion's Mane mushroom steak basted in rosemary-garlic butter with a vibrant herbaceous chimichurri sauce.

Ingredients
- 2 large lion's mane mushrooms
- 3 tbsp unsalted butter (or vegan butter substitute)
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary
- 1/2 cup fresh chimichurri (parsley, oregano, garlic, red wine vinegar, olive oil)
- 1/2 tsp sea salt (adjust to taste)
- 1 tbsp neutral oil (for searing)
Instructions
- Trim the base of the Lion's Mane mushrooms to ensure they sit flat, then slice into 1-inch thick steaks.
- Heat a heavy-bottomed skillet over medium-high heat with the neutral oil until shimmering.
- Place the mushroom steaks in the skillet and sear for 4-5 minutes per side until golden brown and compressed.
- Reduce heat to medium, add the butter, smashed garlic, and rosemary sprigs to the pan.
- Baste the mushrooms continuously with the foaming, aromatic butter for 3-4 minutes until deeply fragrant and tender.
- Remove from the pan and serve immediately topped with a generous spoonful of chimichurri.
