Green Goddess Dip by Alfiecooks

Bright, creamy avocado dip with herbs, pistachios, and lime, ready in 10 minutes.

Ingredients
- 2 ripe avocados
- 1 small jalapeño, seeded if desired
- 1 garlic clove
- 1 cup fresh parsley leaves, packed
- 1 cup fresh coriander leaves, packed
- 2 tbsp lime juice
- 3 tbsp olive oil
- 2 green onion, green parts only, chopped
- 1/4 cup toasted pistachios
- 1 to 2 ice cubes
- 1/2 tsp fine salt
- 1/4 tsp black pepper
- Flatbreads, for serving
Instructions
- Add the avocados, jalapeño, garlic, parsley, coriander, lime juice, olive oil, salt, and pepper to a blender or food processor.
- Blitz for 20 to 30 seconds until mostly smooth and vividly green, scraping down the sides once if needed.
- Add the spring onion greens, toasted pistachios, and 1 to 2 ice cubes, then pulse for 10 to 15 seconds until lightly chunky and creamy.
- Taste and adjust with more salt or lime juice, then serve immediately with flatbreads.
