Green Goddess Dip by Alfiecooks

Bright, creamy avocado dip with herbs, pistachios, and lime, ready in 10 minutes.

Ingredients

  • 2 ripe avocados
  • 1 small jalapeño, seeded if desired
  • 1 garlic clove
  • 1 cup fresh parsley leaves, packed
  • 1 cup fresh coriander leaves, packed
  • 2 tbsp lime juice
  • 3 tbsp olive oil
  • 2 green onion, green parts only, chopped
  • 1/4 cup toasted pistachios
  • 1 to 2 ice cubes
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • Flatbreads, for serving

Instructions

  1. Add the avocados, jalapeño, garlic, parsley, coriander, lime juice, olive oil, salt, and pepper to a blender or food processor.
  2. Blitz for 20 to 30 seconds until mostly smooth and vividly green, scraping down the sides once if needed.
  3. Add the spring onion greens, toasted pistachios, and 1 to 2 ice cubes, then pulse for 10 to 15 seconds until lightly chunky and creamy.
  4. Taste and adjust with more salt or lime juice, then serve immediately with flatbreads.
