Crispy Gnocchi Salad by Alfiecooks

Crispy golden gnocchi tossed with diced cucumber, red pepper, and a creamy tahini-chili dressing.

Ingredients

  • 500 g gnocchi
  • 0.5 red onion, finely diced
  • 0.5 red pepper, finely diced
  • 0.25 cucumber, finely diced
  • 1 large handful fresh parsley, chopped
  • 2 tbsp mayonnaise
  • 2 tbsp yogurt
  • 1 small garlic clove, minced
  • 0.5 lemon, juiced
  • 1.5 tbsp runny tahini
  • 1 tsp chili crisp
  • 4 tbsp olive oil
  • 1/2 tsp smoked paprika

Instructions

  1. In a small bowl, whisk together mayonnaise, yogurt, minced garlic, lemon juice, tahini, and chili crisp. Season with salt and pepper to taste
  2. Heat 2 tbsp olive oil in a frying pan over medium heat. Add gnocchi and fry for 3-5 minutes until golden-brown.
  3. Add remaining 2 tbsp olive oil, smoked paprika, salt, and pepper to the pan. Toss and fry for another 3-5 minutes until toasty and crisp.
  4. In a large bowl, combine the cooked gnocchi, diced onion, pepper, cucumber, and half the chopped parsley.
  5. Add a few generous spoonfuls of the dressing and toss well to coat. Serve topped with extra chili crisp and remaining fresh parsley
