Crispy Gnocchi Salad by Alfiecooks

Crispy golden gnocchi tossed with diced cucumber, red pepper, and a creamy tahini-chili dressing.

Ingredients
- 500 g gnocchi
- 0.5 red onion, finely diced
- 0.5 red pepper, finely diced
- 0.25 cucumber, finely diced
- 1 large handful fresh parsley, chopped
- 2 tbsp mayonnaise
- 2 tbsp yogurt
- 1 small garlic clove, minced
- 0.5 lemon, juiced
- 1.5 tbsp runny tahini
- 1 tsp chili crisp
- 4 tbsp olive oil
- 1/2 tsp smoked paprika
Instructions
- In a small bowl, whisk together mayonnaise, yogurt, minced garlic, lemon juice, tahini, and chili crisp. Season with salt and pepper to taste
- Heat 2 tbsp olive oil in a frying pan over medium heat. Add gnocchi and fry for 3-5 minutes until golden-brown.
- Add remaining 2 tbsp olive oil, smoked paprika, salt, and pepper to the pan. Toss and fry for another 3-5 minutes until toasty and crisp.
- In a large bowl, combine the cooked gnocchi, diced onion, pepper, cucumber, and half the chopped parsley.
- Add a few generous spoonfuls of the dressing and toss well to coat. Serve topped with extra chili crisp and remaining fresh parsley
