Speedy peanut butter and chili crisp noodles are a ridiculously delicious and indulgent quick dinner option.

Ingredients

  • 2 tbsp crunchy peanut butter
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 2 tbsp finely sliced green onion
  • 2 tbsp finely diced shallot
  • 2 tsp chili crisp
  • 2 tbsp toasted sesame seeds
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 80 ml hot neutral oil (e.g., sunflower)
  • 2 portions noodles of choice
  • 1 small red chili, sliced

Instructions

  1. Combine peanut butter, garlic, ginger, spring onion, shallot, chili crisp, sesame seeds, soy sauce, and rice wine vinegar in a frying pan.
  2. Cook noodles according to package directions, reserving about 1/4 cup of the noodle cooking liquid
  3. Heat the neutral oil in a separate small saucepan or microwave until hot and just starting to smoke.
  4. Carefully pour the hot oil over the ingredients in the frying pan, whisking vigorously to combine and create the sauce.
  5. Add the cooked noodles to the sauce in the frying pan and toss to coat.
  6. Loosen the sauce with a little reserved noodle cooking liquid if needed.
  7. Garnish with extra spring onion, sliced red chilli, and sesame seeds before serving.
