Speedy peanut butter and chili crisp noodles are a ridiculously delicious and indulgent quick dinner option.

Ingredients
- 2 tbsp crunchy peanut butter
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 2 tbsp finely sliced green onion
- 2 tbsp finely diced shallot
- 2 tsp chili crisp
- 2 tbsp toasted sesame seeds
- 2 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 80 ml hot neutral oil (e.g., sunflower)
- 2 portions noodles of choice
- 1 small red chili, sliced
Instructions
- Combine peanut butter, garlic, ginger, spring onion, shallot, chili crisp, sesame seeds, soy sauce, and rice wine vinegar in a frying pan.
- Cook noodles according to package directions, reserving about 1/4 cup of the noodle cooking liquid
- Heat the neutral oil in a separate small saucepan or microwave until hot and just starting to smoke.
- Carefully pour the hot oil over the ingredients in the frying pan, whisking vigorously to combine and create the sauce.
- Add the cooked noodles to the sauce in the frying pan and toss to coat.
- Loosen the sauce with a little reserved noodle cooking liquid if needed.
- Garnish with extra spring onion, sliced red chilli, and sesame seeds before serving.
