Sumo Citrus Tiramisu by Alex Trim 1

Sumo citrus-soaked ladyfingers layered with a rich, velvety mascarpone cream in a bright winter dessert.

Ingredients

  • 150 ml sumo citrus juice
  • 100 g sugar
  • 1 sumo citrus zest
  • 4 egg yolks
  • 0.5 lemon juice
  • 2 tsp cornstarch
  • 12 egg yolks
  • 6 egg whites
  • 200 g sugar
  • 500 g mascarpone
  • 24 ladyfingers
  • 2 tbsp alcohol (optional)

Instructions

  1. Combine zest, 100g sugar, and cornstarch in a bowl, mixing well with fingers.
  2. Whisk in 150ml Sumo Citrus juice and lemon juice until combined.
  3. Add 4 egg yolks and whisk until smooth.
  4. Cook mixture over a water bath, stirring constantly until it reaches 180°F and thickens; strain, cover with plastic, and chill.
  5. Whip 6 egg whites with 50g sugar until firm peaks form; set aside.
  6. In a separate bowl, beat 500g mascarpone until loosened, then add 6 yolks and 150g sugar, mixing until incorporated.
  7. Gently fold the whipped egg whites into the mascarpone mixture in three additions
  8. Soak ladyfingers in extra Sumo Citrus juice and optional alcohol.
  9. Layer soaked ladyfingers and mascarpone cream in a dish, repeating until full.
  10. Top with chilled Sumo Citrus curd and refrigerate for at least 6 hours before serving.
