Rich Basque Chocolate Cheesecake by Alex Trim 1

Creamy chocolate Basque cheesecake featuring a caramelized exterior served with a rich semisweet chocolate ganache sauce.

Ingredients

  • 2 lb cream cheese, softened
  • 1.5 cup granulated sugar
  • 6 large eggs
  • 2 cup heavy cream
  • 1 tsp vanilla extract
  • 0.5 cup all-purpose flour
  • 1 cup semisweet chocolate chips
  • 0.5 cup heavy cream (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a 9-inch springform pan with two sheets of parchment paper, letting the edges hang over the side.
  2. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy, about 3 minutes.
  3. Add the eggs one at a time, beating well after each addition until fully incorporated.
  4. Stir in the 2 cups of heavy cream and vanilla extract until the mixture is smooth.
  5. Sift the flour over the batter and gently fold it in until no streaks remain.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes until the top is deeply browned and the center still has a slight wobble.
  7. Remove from the oven and let cool completely in the pan for at least 3 hours.
  8. To make the sauce, heat 0.5 cup heavy cream until steaming, then pour over chocolate chips; let sit for 2 minutes before whisking until glossy.
  9. Pour the chocolate sauce over the cooled cheesecake before serving.
