Creamy chocolate Basque cheesecake featuring a caramelized exterior served with a rich semisweet chocolate ganache sauce.

Ingredients
- 2 lb cream cheese, softened
- 1.5 cup granulated sugar
- 6 large eggs
- 2 cup heavy cream
- 1 tsp vanilla extract
- 0.5 cup all-purpose flour
- 1 cup semisweet chocolate chips
- 0.5 cup heavy cream (for sauce)
Instructions
- Preheat your oven to 400°F (200°C) and line a 9-inch springform pan with two sheets of parchment paper, letting the edges hang over the side.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy, about 3 minutes.
- Add the eggs one at a time, beating well after each addition until fully incorporated.
- Stir in the 2 cups of heavy cream and vanilla extract until the mixture is smooth.
- Sift the flour over the batter and gently fold it in until no streaks remain.
- Pour the batter into the prepared pan and bake for 40-45 minutes until the top is deeply browned and the center still has a slight wobble.
- Remove from the oven and let cool completely in the pan for at least 3 hours.
- To make the sauce, heat 0.5 cup heavy cream until steaming, then pour over chocolate chips; let sit for 2 minutes before whisking until glossy.
- Pour the chocolate sauce over the cooled cheesecake before serving.
