Golden brioche slices served in a rich, caramelized orange reduction made with fresh zest and juice.

Ingredients

  • 1.5 cup whole milk
  • 3 egg yolks
  • 3 tbsp brown sugar
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 4-6 slices thick sliced brioche
  • 2 tbsp orange zest
  • 1 cup orange juice
  • 0.5 cup sugar
  • 0.5 cup melted butter
  • 3 tbsp cognac
  • 1 tbsp grand marnier

Instructions

  1. Whisk together the sugar, egg yolks, and vanilla in a bowl. Whisk in the milk and melted butter until well incorporated.
  2. Dip the brioche slices into the batter and let them soak for 10 minutes.
  3. Fry the bread in a pan with a little melted butter over medium heat until browned on both sides, then remove from the pan.
  4. In the same pan, combine the 0.5 cup melted butter and 0.5 cup sugar, stirring until the mixture begins to lightly caramelize.
  5. Add the orange zest and stir for 20 seconds.
  6. Pour in the orange juice, whisking constantly until the mixture dissolves and forms a syrup.
  7. Return the French toast to the pan, coating both sides with the sauce.
  8. Carefully remove from heat to add the cognac and Grand Marnier, then return to heat and cook until the sauce reaches your desired consistency.
