French Toast Suzette by Alex Trim 1

Golden brioche slices served in a rich, caramelized orange reduction made with fresh zest and juice.

Ingredients
- 1.5 cup whole milk
- 3 egg yolks
- 3 tbsp brown sugar
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 4-6 slices thick sliced brioche
- 2 tbsp orange zest
- 1 cup orange juice
- 0.5 cup sugar
- 0.5 cup melted butter
- 3 tbsp cognac
- 1 tbsp grand marnier
Instructions
- Whisk together the sugar, egg yolks, and vanilla in a bowl. Whisk in the milk and melted butter until well incorporated.
- Dip the brioche slices into the batter and let them soak for 10 minutes.
- Fry the bread in a pan with a little melted butter over medium heat until browned on both sides, then remove from the pan.
- In the same pan, combine the 0.5 cup melted butter and 0.5 cup sugar, stirring until the mixture begins to lightly caramelize.
- Add the orange zest and stir for 20 seconds.
- Pour in the orange juice, whisking constantly until the mixture dissolves and forms a syrup.
- Return the French toast to the pan, coating both sides with the sauce.
- Carefully remove from heat to add the cognac and Grand Marnier, then return to heat and cook until the sauce reaches your desired consistency.
