Ingredients
- 2 salmon fillets, skin-on (approx. 6 oz each)
- 1 tbsp neutral oil (grapeseed or avocado)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Pat the salmon skin completely dry with paper towels to help it crisp instead of steam.
- Season the flesh side of the salmon with salt and pepper.
- Heat the oil in a stainless steel or cast-iron skillet over medium-high heat until shimmering.
- Place the salmon skin-side down and press gently with a spatula for 30 seconds to prevent curling.
- Cook undisturbed for 5-6 minutes, until the skin is deeply golden and releases easily from the pan.
- Flip carefully and cook for 2-3 minutes more, until the salmon reaches your preferred doneness.
- Rest for 2 minutes before serving so the flesh stays tender.
