Rich molten lava cakes with a warm, flowing chocolate center and delicate, tender cake exterior.

Ingredients
- 6 oz semisweet chocolate chips
- 10 tbsp unsalted butter
- 3 large eggs
- 3 egg yolks
- 1 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1 tbsp cocoa powder (for dusting ramekins)
Instructions
- Preheat oven to 415°F (213°C). Grease 6 4-oz ramekins with butter, dust with cocoa powder, and tap out the excess.
- Melt the chocolate and butter together in a heat-proof bowl until smooth, then set aside to cool slightly.
- Whisk the eggs and egg yolks together in a large bowl, then add the powdered sugar and whisk until fully combined.
- Add the vanilla, salt, and the melted chocolate mixture to the eggs, whisking until smooth.
- Fold in the flour and whisk until just combined.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- Place ramekins on a cookie sheet and bake for 12-14 minutes, until edges are set but centers remain soft.
- Let cakes rest for 2 minutes before serving directly in the ramekins or inverting onto a plate.
