Rich molten lava cakes with a warm, flowing chocolate center and delicate, tender cake exterior.

Ingredients

  • 6 oz semisweet chocolate chips
  • 10 tbsp unsalted butter
  • 3 large eggs
  • 3 egg yolks
  • 1 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp cocoa powder (for dusting ramekins)

Instructions

  1. Preheat oven to 415°F (213°C). Grease 6 4-oz ramekins with butter, dust with cocoa powder, and tap out the excess.
  2. Melt the chocolate and butter together in a heat-proof bowl until smooth, then set aside to cool slightly.
  3. Whisk the eggs and egg yolks together in a large bowl, then add the powdered sugar and whisk until fully combined.
  4. Add the vanilla, salt, and the melted chocolate mixture to the eggs, whisking until smooth.
  5. Fold in the flour and whisk until just combined.
  6. Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
  7. Place ramekins on a cookie sheet and bake for 12-14 minutes, until edges are set but centers remain soft.
  8. Let cakes rest for 2 minutes before serving directly in the ramekins or inverting onto a plate.
