Banana Cake with Peanut Butter Frosting by Ajdediego

Ingredients
- 3 ripe bananas, mashed
- 2 cup all-purpose flour
- 1.5 cup granulated sugar
- 0.5 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking soda
- 0.5 cup sour cream
- 1 cup creamy peanut butter (for frosting)
- 0.5 cup unsalted butter, softened (for frosting)
- 2 cup powdered sugar (for frosting)
- 150g semi-sweet chocolate chips (for ganache)
- 0.5 cup heavy cream (for ganache)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
- Cream together butter and sugar in a large bowl until light and fluffy, about 3 minutes.
- Beat in eggs one at a time, then stir in the mashed bananas and sour cream.
- Fold in flour and baking soda until just combined; do not overmix.
- Pour batter into the prepared pan and bake for 40-45 minutes until a toothpick comes out clean.
- Cool the cake completely on a wire rack before frosting.
- Whip peanut butter, butter, and powdered sugar together until smooth to make the frosting.
- Heat heavy cream until simmering, pour over chocolate chips, and stir until glossy to make the ganache.
- Spread peanut butter frosting over the cooled cake and drizzle with ganache before serving.
