Ingredients

  • 3 ripe bananas, mashed
  • 2 cup all-purpose flour
  • 1.5 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking soda
  • 0.5 cup sour cream
  • 1 cup creamy peanut butter (for frosting)
  • 0.5 cup unsalted butter, softened (for frosting)
  • 2 cup powdered sugar (for frosting)
  • 150g semi-sweet chocolate chips (for ganache)
  • 0.5 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. Cream together butter and sugar in a large bowl until light and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then stir in the mashed bananas and sour cream.
  4. Fold in flour and baking soda until just combined; do not overmix.
  5. Pour batter into the prepared pan and bake for 40-45 minutes until a toothpick comes out clean.
  6. Cool the cake completely on a wire rack before frosting.
  7. Whip peanut butter, butter, and powdered sugar together until smooth to make the frosting.
  8. Heat heavy cream until simmering, pour over chocolate chips, and stir until glossy to make the ganache.
  9. Spread peanut butter frosting over the cooled cake and drizzle with ganache before serving.
