Ingredients

  • 1 1/2 lb boneless skinless chicken thighs or breasts, cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 cup honey
  • 2 tbsp chipotle in adobo sauce, minced
  • 1 tbsp adobo sauce from the can
  • 1 tbsp lime juice
  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tsp chipotle in adobo sauce, minced
  • 1 tsp lime juice
  • 1 tbsp chopped cilantro

Instructions

  1. Season the chicken with salt, pepper, garlic powder, smoked paprika, onion powder, and cayenne, tossing to coat evenly.
  2. Heat the olive oil in a skillet over medium-high heat, then cook the chicken for 6-8 minutes until browned and cooked through to 165°F.
  3. Stir in the honey, minced chipotle, adobo sauce, and lime juice, then cook for 1-2 minutes until the chicken looks glossy and sticky.
  4. Mix the sour cream, mayonnaise, chipotle, lime juice, and cilantro in a small bowl until smooth to make the chipotle crema.
  5. Warm the tortillas for about 20 seconds per side so they bend easily without cracking.
  6. Fill each tortilla with lettuce, tomatoes, cheese, and the honey chipotle chicken, then drizzle with chipotle crema.
  7. Roll the wraps tightly and serve immediately while the chicken is warm and the tortillas are soft.
