Ingredients
- 1 1/2 lb boneless skinless chicken thighs or breasts, cut into bite-size pieces
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 cup honey
- 2 tbsp chipotle in adobo sauce, minced
- 1 tbsp adobo sauce from the can
- 1 tbsp lime juice
- 4 large flour tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 tsp chipotle in adobo sauce, minced
- 1 tsp lime juice
- 1 tbsp chopped cilantro
Instructions
- Season the chicken with salt, pepper, garlic powder, smoked paprika, onion powder, and cayenne, tossing to coat evenly.
- Heat the olive oil in a skillet over medium-high heat, then cook the chicken for 6-8 minutes until browned and cooked through to 165°F.
- Stir in the honey, minced chipotle, adobo sauce, and lime juice, then cook for 1-2 minutes until the chicken looks glossy and sticky.
- Mix the sour cream, mayonnaise, chipotle, lime juice, and cilantro in a small bowl until smooth to make the chipotle crema.
- Warm the tortillas for about 20 seconds per side so they bend easily without cracking.
- Fill each tortilla with lettuce, tomatoes, cheese, and the honey chipotle chicken, then drizzle with chipotle crema.
- Roll the wraps tightly and serve immediately while the chicken is warm and the tortillas are soft.
