Caramelized Onion Chili Oil Pasta by Aayeshaaan

Sweet caramelized onions tossed with spicy chili oil and al dente pasta in a buttery emulsion.

Ingredients
- 200g (7 oz) pasta of choice
- 2 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 2 tbsp chili oil (with crisp)
- 3 cloves garlic, minced
- 1/2 cup parmesan cheese, grated
- 1/2 tsp salt (adjust to taste)
Instructions
- Boil a large pot of salted water and cook pasta according to package directions until al dente.
- Melt 2 tablespoons of butter in a large skillet over medium-low heat; add sliced onions and cook, stirring occasionally, for 20-25 minutes until deeply golden and caramelized.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the chili oil and remaining tablespoon of butter, allowing the butter to melt into the oil.
- Transfer the cooked pasta directly into the skillet, adding 2-3 tablespoons of pasta water to create a glossy sauce.
- Toss in the parmesan cheese and mix vigorously over low heat for 1 minute until the sauce emulsifies and coats the pasta.
