Caramelized Onion Chili Oil Pasta by Aayeshaaan

Sweet caramelized onions tossed with spicy chili oil and al dente pasta in a buttery emulsion.

Ingredients

  • 200g (7 oz) pasta of choice
  • 2 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp chili oil (with crisp)
  • 3 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Boil a large pot of salted water and cook pasta according to package directions until al dente.
  2. Melt 2 tablespoons of butter in a large skillet over medium-low heat; add sliced onions and cook, stirring occasionally, for 20-25 minutes until deeply golden and caramelized.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Stir in the chili oil and remaining tablespoon of butter, allowing the butter to melt into the oil.
  5. Transfer the cooked pasta directly into the skillet, adding 2-3 tablespoons of pasta water to create a glossy sauce.
  6. Toss in the parmesan cheese and mix vigorously over low heat for 1 minute until the sauce emulsifies and coats the pasta.
