Fluffy, folded omelette filled with savory smoked ham, sautéed bell peppers, onions, and melted cheddar.

Ingredients

  • 4 large eggs
  • 2 tbsp whole milk
  • 1/2 cup smoked ham, diced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup yellow onion, diced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Whisk eggs, milk, salt, and pepper in a medium bowl until thoroughly combined and slightly frothy.
  2. Melt butter in an 8-inch non-stick skillet over medium heat.
  3. Add diced bell peppers and onions to the skillet; sauté for 4-5 minutes until softened.
  4. Stir in the diced ham and cook for 1 minute until warmed through.
  5. Pour the egg mixture over the vegetables and ham, tilting the pan to ensure an even layer.
  6. Cook undisturbed for 2-3 minutes, using a spatula to gently lift the edges and let uncooked egg flow underneath.
  7. Sprinkle cheese over one half of the omelette once the eggs are mostly set but still slightly moist on top.
  8. Fold the omelette in half, slide onto a plate, and serve immediately
