Classic Denver Omelette by A Spicy Perspective
Fluffy, folded omelette filled with savory smoked ham, sautéed bell peppers, onions, and melted cheddar.

Ingredients
- 4 large eggs
- 2 tbsp whole milk
- 1/2 cup smoked ham, diced
- 1/2 cup green bell pepper, diced
- 1/4 cup yellow onion, diced
- 1/2 cup sharp cheddar cheese, shredded
- 1 tbsp unsalted butter
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Whisk eggs, milk, salt, and pepper in a medium bowl until thoroughly combined and slightly frothy.
- Melt butter in an 8-inch non-stick skillet over medium heat.
- Add diced bell peppers and onions to the skillet; sauté for 4-5 minutes until softened.
- Stir in the diced ham and cook for 1 minute until warmed through.
- Pour the egg mixture over the vegetables and ham, tilting the pan to ensure an even layer.
- Cook undisturbed for 2-3 minutes, using a spatula to gently lift the edges and let uncooked egg flow underneath.
- Sprinkle cheese over one half of the omelette once the eggs are mostly set but still slightly moist on top.
- Fold the omelette in half, slide onto a plate, and serve immediately
