Breakfast Casserole with Hash Browns by A Spicy Perspective
Hearty breakfast bake featuring crispy hash browns, savory sausage, bacon, and melted cheddar cheese.

Ingredients
- 900g (2 lbs) frozen shredded hash browns, thawed
- 12 large eggs
- 250g (8 oz) breakfast sausage, browned
- 250g (8 oz) bacon, cooked and crumbled
- 250g (2 cup) cheddar cheese, shredded
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 1/2 cup whole milk
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- Sauté the diced onion and bell pepper in a skillet over medium heat for 5-7 minutes until softened.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Spread the thawed hash browns into the bottom of the prepared baking dish.
- Layer the browned sausage, crumbled bacon, sautéed vegetables, and half of the shredded cheese over the hash browns.
- Pour the egg mixture evenly over the top of the ingredients in the dish.
- Sprinkle the remaining cheese over the surface.
- Bake for 45-50 minutes or until the center is set and the edges are golden brown.
