Breakfast Casserole with Hash Browns by A Spicy Perspective

Hearty breakfast bake featuring crispy hash browns, savory sausage, bacon, and melted cheddar cheese.

Ingredients

  • 900g (2 lbs) frozen shredded hash browns, thawed
  • 12 large eggs
  • 250g (8 oz) breakfast sausage, browned
  • 250g (8 oz) bacon, cooked and crumbled
  • 250g (2 cup) cheddar cheese, shredded
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 1/2 cup whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Sauté the diced onion and bell pepper in a skillet over medium heat for 5-7 minutes until softened.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Spread the thawed hash browns into the bottom of the prepared baking dish.
  5. Layer the browned sausage, crumbled bacon, sautéed vegetables, and half of the shredded cheese over the hash browns.
  6. Pour the egg mixture evenly over the top of the ingredients in the dish.
  7. Sprinkle the remaining cheese over the surface.
  8. Bake for 45-50 minutes or until the center is set and the edges are golden brown.
